New Executive Chef of MDRD draws from Michigan roots

The Amway Grand Plaza, Curio Collection has appointed Chef Erika Brigham as the new Executive Chef of MDRD, the historic hotel’s upscale, contemporary Spanish restaurant in downtown Grand Rapids. Located on the 27th floor of the Amway Grand Plaza’s recently renovated glass tower, MDRD joined the hotel’s collection of seven diverse dining outlets in 2020, featuring lavish libations, an energetic atmosphere, and panoramic city views.

Brigham will spearhead MDRD’s inventive, Spanish-inspired food and beverage menus and programming with a goal to elevate the restaurant’s fine dining experience to new heights.

“Since its opening, MDRD has introduced a new level of cuisine to Grand Rapids. In my new role, I will be working closely with our talented restaurant team to continue pushing the envelope and offering the community unexpected ways to connect with food and culture,” said Brigham.

A Michigan native, Brigham’s culinary journey began in Tucson, launching several new restaurants with Fox Restaurant Concepts. She rose through Grand Rapids’ culinary scene at The Gilmore Collection and, most recently, as the executive chef of ROAM, known for its global street food.

Brigham has cultivated inspiration from Spain’s bountiful Michelin-starred restaurants to reinvent the country’s rich culinary traditions with pioneering techniques, upscale dining, and Michigan influences. Using locally sourced seasonal ingredients, new dishes include melena de león and empanada de rabo de toro. Brigham plans to expand MDRD’s offerings with conceptual tasting dinners, special menus, and collaborative events that create immersive experiences for guests to interact with elevated cuisine.
