Restaurant launches elevated brunch menu

The Amway Grand Plaza will debut a Spanish-inspired Sunday brunch at MDRD, the hotel’s chic rooftop restaurant at 187 Monroe Ave NW. Starting March 24, MDRD will offer an à la carte brunch menu with a contemporary Spanish flair every Sunday from 11 a.m. to 3 p.m. Guests can take in the views of the Grand Rapids cityscape from the hotel’s 27th floor for an unmatched brunch experience in Grand Rapids.

Curated by new Executive Chef Erika Brigham, the à la carte menu embraces MDRD’s inventive approach to Spanish cuisine.

“MDRD’s new brunch is unlike anything else in the region,” said Brigham. “Tying in Spanish influences with MDRD’s lively atmosphere, we wanted to introduce a fresh and elevated brunch experience to energize downtown Grand Rapids’ Sunday brunch and cocktail scene.”  

Menu highlights include churro bites dusted with cocoa powder, a Spanish omelet with potatoes and onions, and MDRD’s interpretation of chicken and waffles - featuring a paella rice waffle with spicy pan-fried chicken.

The brunch menu also includes specialty cocktails and mocktails that capture the lively Spanish brunch experience, including an espresso martini and blood orange mimosa with cava rosé.

The Amway Grand Plaza, Curio Collection appointed Brigham as the new Executive Chef of MDRD in February 2024. A Michigan native, Brigham’s culinary journey began in Tucson, launching several new restaurants with Fox Restaurant Concepts. She rose through Grand Rapids’ culinary scene at The Gilmore Collection and, most recently, as the executive chef of ROAM, known for its global street food.
